My husband’s family is full of wealth of great recipes! His cousin sent me his mom, Aunt Edie’s, recipe for this cucumber salad as a fabulous summer option. We like it with the vinaigrette, in part because then we can dip my husband’s sourdough bread in it. 🙂
4-6 cucumbers
2-3 tomatoes
1 sweet onion
If you like your cucumbers peeled, do this first. Then slice the cucumbers over a colander using the straight slicing side of a grater. Every layer or two of cucumbers, salt liberally. Then put a lid from a pan or something on top so it puts pressure on the cucumbers. Stack a few soup cans on top of that to press. Leave for about 20 mins.
While the cucumbers are “sweating”, dice the tomatoes and thinly slice the onion. Put in a bowl.
After cucumbers are done sweating, do not rinse them in the colander. Grab by the handful, rinse lightly in hands not to completely remove all salt, but to remove excess salt. Then squeeze really hard in hands to remove fluid and bruise cucumbers. Add to the bowl.
Dress with one of two dressings:
- Vinaigrette: 2 parts oil (I used olive oil) to 1 part vinegar (I used red wine vinegar). Then add pepper, salt, garlic (I used diced, she uses granulated) and dill, to taste. Shake in a shaker.
- Sour cream: Use 1/2 quart or more sour cream, liberal amount of dill (2-3 tbsp). Put directly on salad and toss to combine.
