I put out a request for some suggestions for hot weather recipes, because who wants to cook when it is super hot? One of my friends gave me this recipe and as a house full of people who love Mediterranean food, this was a winner!
2 Large Chicken Breasts, cubed
8 oz package of Sliced Mushrooms
Medium Onion, chopped
Bottle of Balsamic Dressing
Gemelli or other bite-size pasta
8 oz of Cherry Tomatoes, halved
Bag of Spinach (or frozen spinach in a pinch)
Small container (approx 6 oz) of Feta Cheese
Kalamata Olives (to taste)
(I also added half a cucumber, sliced and cute in quarters)
One of my favorite parts is that I can adjust pretty much every ingredient to taste and size of our eating crowd. So if your family doesn’t like an ingredient, then just don’t include it. 😊
Heat up a large skillet, then add enough balsamic dressing to lightly cover the bottom of the pan. Add the chicken, mushrooms and onion to the pan. Meanwhile, boil water and cook the pasta.
Once the chicken is cooked through, add the tomatoes and spinach and cook until the leaves are wilted. Turn off the heat. Stir in the pasta, feta and olives. Then add more dressing to taste.
*** We prefer it cool and ate it with gluten-free pasta.
