Te’jas Chili

My brother used to teach in Nashville, TN. The families at his school put together a recipe book where I found the most A-MAZING chili recipe! I have never been able to find it anywhere else, so I thought I would share it so your family can enjoy it as much as mine.

INGREDIENTS

1 1/2 to 2 lbs ground beef
1/2 onion, chopped
2 (14 ounce) cans tomatoes (we like finely diced)
2 (16 ounce) cans kidney beans
2 (10 ounce) cans tomato soup
2 to 3 cups water
3 tbsp prepared mustard
1/2 cup dill pickle juice
1/4 cup honey
4 to 5 pinches chili powder
4 to 5 pinches cilantro
4 to 5 pinches cumin
Salt & Pepper to taste

Cook chopped onion in a skillet until soft, then add the ground beef, break up and cook until crumbly and cooked through. Drain.

Put the onion and ground beef in the bottom of a pot. Add the tomatoes, beans, tomato soup, water, mustard, pickle juice, honey, and spices. Mix well.

Cook over low heat for 1 hour.

Yield: 12 to 16 servings.
